Banana Nut Bread Recipes

Combining banana and nut is genius. They complement each other yet
have distinct flavors. It is more filling than traditional banana bread
because the nuts contain protein which will keep you hunger-free for a

Banana Nut Bread

Ingredients
- 2/3 cup sugar
- 1/3 cup shortening
- 2 eggs
- 3 tablespoons soured milk
- 1 tablespoon vinegar
- 1 cup mashed ripened banana (2 to 3)
- 2 cups flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla (optional)
- 1/2 cup nuts, chopped (use your favorite, but pecans or walnuts work
very well in this recipe)
This moist fruit bread makes a nice addition to a brunch or a
luncheon. The recipe doubles easily. Directions
- Preheat the oven to 350°F.
- Combine the first three ingredients in a large bowl and beat
until smooth.
- Sour the milk by putting 1 tablespoon of vinegar in the milk and
letting it stand a few minutes
until it curdles; then stir in the milk and the mashed bananas.
- Combine the dry ingredients and stir into the banana mixture.
- Pour into a 9 x 5 greased and floured bread pan. Let the mixture
rest in the pan for 20 minutes before baking.
- Bake 55-60 minutes or until a knife inserted into the center of
the bread comes out clean.
- Remove the bread from the pan and cool completely.
Orange Banana Nut Bread

INGREDIENTS:
- 1 1/2 cups sugar
- 3 tablespoons vegetable oil
- 2 eggs
- 1 1/4 cups mashed bananas 3/4 cup orange juice
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt 1 cup chopped walnuts
DIRECTIONS:
In a mixing bowl, combine the sugar, oil and eggs; mix well.
Stir in bananas and orange juice. Combine the dry ingredients;
add to banana mixture, beating just until moistened. Stir in
walnuts. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans.
Bake at 325 degrees F for 50-60 minutes or until a toothpick
inserted near the center comes out clean. Cool for 10 minutes;
remove from pans to a wire rack to cool completely. |
